Cooking with Bay Nuts
In the fall we love to gather acorns and bay nuts. Both are so much fun to hunt for and can be turned in to yummy treats for us to enjoy later in the year. Some say the bay nut is stimulant and can be used like a coffee, roasted, ground and stewed. We also like to turn them into chocolate treats.
Beginner tips: Can you find a bay tree around you? I first thought I couldn’t but then they stared showing themselves to me all over my neighborhood. The leaves of wild Bays can also be used in cooking, often they are stronger than the ones you would find in the store so you do not have to use as much.
Bay Chocolate Chunk:
Bay nuts, collect in the fall, roasted and cracked open
2. Almonds, soaked and dried out
3. Imported bulk chocolate
Melt chocolate, cut up bay nuts and almonds, I used my kitchen aid this time and it worked well, mix together, place in fridge to harden.
